One of my favorite cucumber recipes is this light, simple and delicious cucumber sandwich with cream cheese.


My family and I have been making it for tea parties.


But they are also the perfect dish for a picnic date!

This cucumber sandwich with cream cheese recipe is so good and so easy to make!


There are very few ingredients needed for this recipe.


But I love that I can use the cucumber harvest from my garden!

Notes About Cucumber Sandwich With Cream Cheese

While I recommend using fresh cucumbers from the garden or local farmer’s market, any cucumbers you find at your local grocery store will do.


Because I love to grow cucumbers, I’m always looking for ways to use them in recipes which is why I’m tying this one to my garden.

If you aren’t growing your own cucumbers, no worries, head to your favorite market and pick some up.


Because there are two types of cream cheese, block and whipped, I prefer the whipped kind because it’s easier to spread.

But you can use whichever kind you like or have on hand.


You can make cucumber sandwiches with cream cheese with any kind of bread you want, but I think it’s best with a thin-sliced variety.

Ingredients

  • 8 oz Whipped Cream Cheese
  • 2 Cucumbers, Thin Sliced
  • 1 loaf Thin-sliced bread
Instructions

Slice cucumbers thin.
Spread a thin layer of cream cheese on two slices of bread.
Top one with sliced cucumbers.
Put the two pieces of bread together to form a sandwich.
Cut off the crust.
Cut into triangles.
Serve and enjoy!

    My family have made these sandwiches for decades; however, we soak the

    cucumbers in vinegar first, then rinse off the vinegar and dry the cucumber

    slices before putting them on the bread - gives an added kick - wonderfully

    refreshing for a summer picnic.

    Have never had cucumber sandwiches with cream cheese...Will try...sounds yummy..I do eat heavy cream on bread and sprinkle sugar as a sandwich...Did this way back when I was a child during wartime.. very good! Didn't have desserts and much choice for a lot of things...
