Homemade salsa is one of my favorite healthy toppings for Mexican recipes. This pineapple cucumber salsa recipe is a sweeter summer salsa than traditional tomato salsa recipes. The fresh pineapple, spicy jalapeno, and tangy lime juice are a delicious flavor combination! Cucumber fruit salsa may sound like an odd combo but you seriously have to try it!

A healthy summer salsa with sweetness and heat!

You might think that pineapple salsa should have tomatoes in it but that is not always true. Since pineapple and tomato are both acidic, that flavor combination is a little too overpowering for my palette.

This pineapple cucumber and jalapeno combination isn't quite as overpowering in acidity. The cucumber gives it a nice crunch and lets the flavor of the cilantro and lime really stand out.

What Can You Do With Pineapple Salsa?

Of course, the best thing to do with any kind of fresh salsa is just to scoop it up with chips, right? Well, it also goes great on just about all Mexican food or your favorite rice bowl recipes.


You could also add it to your next spinach salad, use it as a topping on homemade pizza or even put a spoon full in your water bottle for a deliciously sweet and zesty way to stay hydrated.

The key to a GOOD pineapple cucumber salsa is fresh pineapple. No, I don't start with a whole pineapple. I buy them pre-cored and peeled from my local grocery store.


If you want to start with an actual whole pineapple, get a pineapple corer and slicer tool. It will make your life MUCH easier. Check out the post at Chestnut Hill Farms to learn how to use a pineapple corer correctly.


So, besides the pineapple, here are the salsa ingredients you need. (actual measurements are in the recipe card.


  • Fresh pineapple (chopped into small pieces)
  • Jalapenos
  • Limes
  • Garlic
  • Cucumber (deseeded)
  • Fresh cilantro
  • Red onion
  • Salt and pepper to taste

How to make this cucumber salsa recipe

This summer salsa is incredibly fast and easy to make. Seriously... besides some chopping, there is nothing to do. Get a high-quality garlic press to mince your garlic. Other than that, a cutting board and sharp knife are all you need.


Try to chop the pineapple and cucumber fairly small. Toss all the rest of the ingredients in a small glass bowl and mix thoroughly. Squeeze in the fresh lime juice and give it a sprinkle of salt and fresh pepper. That's it!

Ingredients

  • 2 cups Fresh pineapple (chopped into small pieces)
/4 cup diced red onion
  • 2 small jalapenos (or one large), de-seeded and diced
  • 1 cup chopped cucumber (de-seeded)
  • ½ a fresh Lime
  • 2 cloves garlic, minced
  • ½ cup Fresh cilantro, chopped
  • salt and pepper to taste
Instructions

Place the pineapple, cucumber, red onion, jalapeno, garlic, and cilantro in a bowl
Squeeze lime juice over it and add salt and pepper to taste.
Mix well and serve!
Tips
  • Store your salsa in a glass bowl with lid in the refrigerator. Should be good for at least a week.
  • Drain excess liquid after storing.
