Summer Garden Caprese Salad

This caprese salad is made up of a ton of yummy goodness from the preschool garden at Little Sprouts. We love growing our own food, but don't always know what to do with the excess, so we like making up dishes. This salad uses different kinds of tomatoes along with cucumbers, onions, and herbs from the garden. Add a little vinegar, oil, and fresh mozzarella balls and you have a treat that delights all the eaters at the table.
Fresh garden goodies like excess tomatoes and excess cucumbers make this recipe fresh and yummy.
It's seasoned with salt, pepper, a little balsamic and olive oil.
We can't make it fast enough around here.

Ingredients
- 2 cups of diced tomatoes
- 2 cups of diced cucumbers
- 8 oz of fresh mozzarella
- 1 small onion, sliced thinly
- 2 T balsamic vinegar
- 1 T fresh basil chopped finely
- 1 T olive oil
- Salt and pepper to taste
Instructions
- Dump all ingredients in a bowl and mix well.
- Taste for seasoning and add salt and pepper as desired.
