But, if you can’t get to The French Riviera, you can easily make one at home.

I often make one when I have left over green bean almondine and potatoes.

I usually add sweet potatoes to my salads.

I love a bit of sweet on this savory salad.

Step 1: In sauce pan, boil the eggs. Peel and slice eggs.

Ingredients

  • 4 Tuna Filets
  • 2 c Salad Greens
  • 4 Eggs, hard boiled, sliced
  • 2 c Potatoes, cooked (I like to use leftovers)
  • 2 c Green beans, cooked (I like to use leftovers)
  • 1 c Kalamata Olives
  • 1/2 c Capers
  • 1 bunch Italian Parsley, chopped
Balsamic Vinaigrette
  • 1/2 c Olive oil
  • 1/2 c Balsamic vinegar
Instructions

Layer greens, tuna, potatoes, green beans, eggs, olives, parsley and capers.
Top with vinaigrette.
Enjoy!

mix olive oil and balsamic vinegar well.
