Nutty Carrots and Apples Salad
Nutty Carrot salad The most vegetable that we can decline into many and many dishes is carrots. We can have it as a hot main dish, salad, juice, or just fresh raw and crunchy as it is. It tastes sweet and sour with a hint of nutty flavor.
Today I’m sharing with you the yummiest salad you can have this spring and summer. It’s easy to make, fast, tasty, and healthy. Especially, for those who are picky eaters or not having enough vegetables in their diet.
I use to have this salad when I was a student in Russia, usually, they make it with sour cream. And then when I was in Morocco, they have the same salad just instead of sour cream they use mayonnaise and add raisin in it too. The Vietnamese carrot salad is similar too but has a sesame sauce instead.
Ok, I took all those elements and made my own salad as I like it and I m sure you will like it too. The ingredients are very simple and affordable. If you have carrots and apples here you go you have the main important thing to start making it. I like how you can play with the doses of seasoning or ingredients in it. Because sometimes, we like something more than the other. Like me I like to have in it lots of nuts so I add more and so...Let’s go fresh!
Yields: 4 people Prep time: 10 minutes No cook time
Ingredients:
- 4 large carrots
- 2 Granny Smith apples
- 1/2 cup nuts (i use walnuts you can use whatever you like)
- 4 tbts sour cream
- 1 tbsp mayonnaise
- 1 tbsp olive oil
- Vinegar
- Salt and pepper
How to make it:
Shred the carrots and the apples, crush the nuts and mix the sour cream, mayonnaise, olive oil, vinegar and salt and pepper to make a sauce and garnish with parsley.
Store the leftover in a container in the fridge.

Sounds delicious. I grew up eating carrot and raisin salad, so adding apple will be a fun change. Personally, I don’t care for sour cream, so I would just stick with mayonnaise and check out other recommended dressing ingredients.
This is surprisingly delicious! At first this combination seems strange, but really it makes sense. Even my husband liked it.
