Cucumber Tomato Salad

Cucumber Tomato Salad is a classic salad, light, cooling, and oh-so refreshing. This easy salad is made with sliced cucumbers & juicy tomatoes and enhanced with slivers of red onion and a tangy vinaigrette dressing.
I love using a combination of fresh or dried oregano and basil in this salad to bring out its essence. Chopped fresh dill or parsley are excellent!
Tossed together just before serving, or made a few hours in advance, this refreshing salad is perfect for a casual dinner night or for feeding a crowd at a potluck. This salad has become a staple on our menu plan over the past year and it’s also become one of the most popular summer recipes here on the blog. I made a quick little video last week, just for fun, so that I could share it with you today as we go into tomato season!

Cucumber Tomato Salad
Recipe details
Ingredients
- 1big English cucumber sliced as the shape you want it
- 2-3 large tomatoes diced/ 10-12 Cherry Tomatoes
- ½ red onion sliced
- 2-3 Basil
- 2/3 Kale/Spinach - Optional
- 1 tablespoon fresh herbs
- 2 tablespoons olive oil
- salt & pepper to taste
Instructions
Preparation
- Combine the tomatoes, cucumbers, onions, Tomatoes, Kale and basil in a large bowl.
- Few drops of Lemon will add zest, its optional
- Drizzle with olive oil, Sprinkle salt, and pepper. Stir well to coat.
- Serve immediately or cover and refrigerate until ready to serve. Enjoy!
Tips
- Fresh Mint is best for summer!

Ummm, not sure but. I think you meant add zest . LOL
Fabulous salad! Sometimes I do a "clean out the fridge" salad and prepare a simple lemon garlic vinaigrette which is whay you have her minus the garlic. Always refreshing. Just picked herbs of choice add another layer of flavor.
