Airfried Potatoes with a top up of a super yummy minty dressing, finished with a garnish of sev (savory crunchy noodles) and a sprinkle of date tamarind sauce. The idea behind this recipe was to create a dish with two star ingredients - potato and mint, using minimum ingredients guaranteeing maximum flavors. Through this fusion salad I have created the vibe of a famous Indian street food called Aloo Chaat, aloo means potato and chaat refers to a savory snack.

Marinated potatoes in olive oil, fresh mint, salt and paprika

Potatoes air fried at 400F for 15 mins

A simple & a quick dressing - fresh mint, thick yogurt, lime juice, pinch of pepper and salt.

Ingredients
Potato Salad
  • 3 red potatoes, 1 yellow potatoes
  • 1/4 cup finely chopped mint
  • 1/2 tsp salt, 1/2 tsp paprika
  • 1 tbsp olive oil
Dressing
  • 1/4 cup thick yogurt
  • 1/2 cup mint
  • 1 tsp lime juice
  • Pinch of black pepper powder and salt
Garnish
  • 1 tbsp sev (small savory crunchy noodles)
  • 2 tbsp date tamarind sauce
  • Handful of chopped fresh mint and sliced cherry tomatoes
Instructions
Potato Salad
Wash the potatoes well, pat dry and dice into small size cubes. In a bowl add potatoes, finely chopped mint, olive oil, salt & paprika. Mix well until nicely coated and let it sit for 5-6 mins. Pre heat airfryer at 400F for 3 mins, spray oil in the tray and spread potatoes evenly, airfry at 400F for 15 mins.
Meanwhile prepare the dressing. In a blender combine mint, yogurt, lime juice and pepper, blend until smooth. Add 1/4 tsp salt and stir.
In a plate spread potatoes, top up with mint dressing generously and finish with a light garnish of sev, tomatoes and date tamarind sauce.
