Orzo Chickpea Salad

I'm not a big cook. Decorate or clean the kitchen? Sure! Sign me up, but making meals isn't my strong suit. That's why I gravitate to super simple recipes...like my orzo chickpea salad. It's healthy, homemade and easy to prepare with ingredients I usually have in the pantry.

It's a great meal on its own, but it also makes a tasty side dish. We often pair it with homemade chicken nuggets.

Open a few cans and chop a few veggies and you're on your way to a very tasty lunch or dinner that doesn't take any skill or a lot of time to prepare. Fabulous!

Ingredients

  • 1 box of orzo pasta
  • 1 can of black olives
  • 2-3 stalks of celery
  • 1 jar of artichoke hearts (and one tablespoon of the juice)
  • 1 large can of chickpeas
  • 1 cucumber
  • Vinaigrette dressing, if desired
Instructions

Boil water and cook pasta in a pot according to the directions on the box. Then rinse and drain it and put it in a large bowl.
Chop the cucumber and celery and add them to the pasta.
Drain and the rinse chick peas, olives and artichoke hearts and that tablespoon of juice. Add them to the pasta and toss all ingredients together with dressing.
Serve immediately or chill in the fridge for a bit.
Tips
  • You can add more of the artichoke heart juice if you like, just remember to save it before you rinse the hearts.
