Can you make this vegan?

Absolutely! Just substitute some of the ingredients with their vegan counterpart and they should be good. For pepperoni slices, there are vegan alternatives or you can replace it with tofu. As for the pasta, you can ditch the tortellini pasta or you can make your own vegan version. Alternatively, you can just ditch it and substitute it with vegan or plant-based pasta.

How long is this pasta good for?

Stored in the refrigerator with plastic wrap or an air-tight container, this salad should last between 2-3 days, it might even taste better a few days after you make it.

Ingredients

  • 12 oz bag of cheesy tortellini pasta
  • ½ cup italian dressing and marinade
  • 1 tbsp italian seasoning
  • ½ lb cherry tomatoes
  • 8oz pepperoncini, sliced
  • 6oz can olives
  • 1 medium cucumber, sliced
  • 3oz pepperoni slices, sliced in half
Instructions

In a large pot, boil 2-3 quarts of water with a little bit of salt.
Add tortellini, boil for 10 minutes. Drain, and rinse well with cold water. Pour into a large bowl.
Cut tomatoes and pepperoni in half.
Slice cucumber, then cut each slice in half.
Slice pepperoncinis, and remove any seeds.
In a small bowl, combine italian dressing and italian seasoning. Stir well, and pour over tortellini. Stir until combined.
Add tomatoes, pepperoncini, olives, cucumber and pepperoni to bowl full of tortellini.
Give it a quick stir to combine everything, cover, and chill for at least one hour before serving.
