This cucumber tomato feta salad is bursting with fresh flavor and lots of feta cheese! The dressing is super simple and adds the perfect flavor to this healthy low carb side. This easy summer salad recipe comes together quickly. with just a handful of ingredients. It's one of our favorite go-to salads for summer or whenever you want. My family loves the colorful salad so I ensure tomatoes are not missed out !

Ingredients
For the dressings and salad
- 2 Tbsp extra virgin olive oil
- 2 Tbsp fresh lemon juice, from 1 medium lemon
- 1 garlic cloves, pressed
- 2 Tbsp Yogurt
- 1/4 tsp black pepper
- 1/4 tsp ground cumin
- Mix Salad leaves
- 1 Cup Spinach
- 1 Cup Lettuce cut into slices
- 1 Tomatoes
- 1 Cucumber,
- 2 Tbsp feta cheese crumbles,
- 1 Cup bread croutons,
- 1/4 cup chopped cilantro
- Pumpkin Seeds-garnish
Instructions
Preparation
- 2 Tbsp olive oil, 2 Tbsp lemon juice, pressed garlic cloves, 1/4 tsp salt, 1/4 tsp pepper and 1/4 tsp cumin, Yogurt- Mix well
- In a large mixing bowl, add Mix salad leaves, Spinach, Lettuce, prepared salad ingredients.
- Now chopped tomatoes, sliced cucumber, feta cheese crumbles, bread croutons, 1/4 cup chopped cilantro.
- Just before serving, drizzle with dressing and toss to combine.
- Sprinkle Pumpkin Seeds

- Add dressing just before serving
