Mango Pomegranate Green Lettuce Salad
Hello foodie friends,
How is everyone? I hope everyone enjoyed their weekend. We had a nice weekend, we found another park close to our home to take Charlie. Let me tell you did he do some serious running around. Unfortunately, it was very windy so there weren’t many dogs at the park. 🙁 The weather has been generally good with the exception of these past few days. For lunch, I had prepared this Mango, Pomegranate Green salad with a few other ingredients. For instance, I even added a few crushed walnuts and almonds just to give it a crunchier taste.
This is another one of my go-to salad recipes. As a salad buff, I have many go-to salad recipes. But I have a few that are my top 3 favorites. I love the large gamma of in-season produce, green salads, vegetables, and fruits. Lettuce can be found all year round, at farmer markets, small shops, and supermarkets but I like to grow my own in my above-ground mini garden. I planted seeds earlier this year, and I was able to use one of my little lettuces to make this salad. 🙂 This Mango, Pomegranate is so vibrant, look at the colors, green, red, yellow-orange how could you not want to indulge? I topped my salad with balsamic vinegar, olive oil, and dill dressing and it was just divine.

Mango Pomegranate Green Lettuce Salad
Recipe details
Ingredients
- 1 romaine lettuce small
- ½ iceberg lettuce
- ½ mango chop into small cubes
- ¼ cup walnuts crushed
- ¼ cup almonds crushed
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- ½ tbsp dill
- raisins handful
Instructions
- Wash and drain lettuce.
- Mix olive oil, balsamic vinegar, and dill. Give it a good shake
- Place lettuce into a bowl and garnish it with the remaining ingredients.
- Pour dressing and enjoy!!

This is called a mango pomegranate salad, but yet it has no pomegranates listed in the ingredients. The picture also appears to show olives.
I agree. No pomegranate in ingredients or olives…
