Nothing screams, “it’s almost summer” quite like a simple and refreshing salad. And if you’re anything like me, you’ve been pretending like it’s basically summer for a couple of months now. So, what do you do when you’re in that headspace, looking out a sun filled window at home, and hunger strikes? Make this super simple yet delicious salad, of course.

As much as I’d love to eat a salad from sweetgreen every day for lunch, it’s definitely not the economical approach. Instead, I’ve settled on a few simple salads I know I love, and can whip up quickly. That way, I don’t cave to ordering out when I’m feeling stressed or hungry.


This Kale, Apple, and Parmesan Summer Salad is one I make often. I’ve always LOVED a kale and parmesan salad with a nice lemon dressing. The flavors are great on their own, or even with a piece of salmon. I realized there were a few other items I could add to quickly bulk up this tasty combo and ensure it fills me up for a longer period of time. Those ingredients include sliced almonds, green apples, and quinoa. While green apple in a salad might not be your go-to, don’t knock it until you try it, because WOW is it delicious. The crispy, crunchy green apples are the perfect compliment to the sharp flavors of parmesan cheese. I also love to incorporate quinoa which is a great way to bulk up any salad or bowl.

  • If you find curly kale to be a bit to tough, massage the kale with a bit of olive oil before adding the other ingredients. This will help soften the leaves.
  • If you’re planning to make this summer salad in a pinch, cook your quinoa ahead of time. This way there is literally no cooking required. Just toss your ingredients in a bowl, drizzle with dressing, and your healthy lunch or dinner is served!
  • Bulk up your meal with your favorite protein! With these flavors I’d recommend shredded chicken, or maybe a simple salmon fillet.

Ingredients
Sweet Lemon Dressing
  • 2 tsp honey
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • thyme pinch
  • salt to taste
  • pepper to taste
Kale and Parmesan Summer Salad
  • 1/2 cup quinoa cooked
  • 1/4 green apple thinly sliced
  • curly kale shredded
  • 1/4 cup parmesan thinly sliced
  • 1/4 cup almonds sliced
Instructions

Cook quinoa according to package instructions.
Mix ingredients for dressing until flavor is lemony and a little sweet, adding more honey or lemon juice as needed. Then, set aside.
Add washed and shredded curly kale to a salad bowl. Toss with quinoa, almonds, thinly sliced parmesan, and thinly sliced green apples.
Toss with a couple tablespoons of salad dressing, adding more as needed.
Enjoy immediately!
