Fruit Salad With a Honey Lime Drizzle

It was so hot here in Michigan last week and I am sure everywhere else too. I decided to make a salad with some fruit and cheese. This is such a refreshing salad. You can use whatever fruits you have available to you or on sale. I had watermelon and a honeydew. I also had some blueberries, for the cheese I had some goat cheese on had. I love goat cheese and fruit together. I f you have not tried it you will want too. The sweetness of the fruit helps balance the tartness from the cheese and the honey lime drizzle is just enough to say hmm what is that? I used a personal sized watermelon and I ended up only using half of it and it was more than enough to feed us and our daughter and her family. I also used a half of a honey dew and a pint of blueberries. I washed my fruit first and then cut them in half and started cutting bite sized chunks form the melons. I arranged them on a platter side by side and then sprinkled the blueberries over all. I then took a spoon and dropped small clumps of the goat cheese around the fruit. For the dressing I used a half of a lime and 1/4 cup of the honey. I whisked them together and just before serving drizzled it all over the top of the frut and cheese.

Ingredients
Fruit salad
  • 1/2 of a small watermelon
  • 12 of a honeydew melon
  • 1 pint of blueberries
  • 1 container goat cheese, any flavor
Honey lime dressing
  • 1/4 c honey
  • 1/2 of a lime
Instructions
Fruit salad
Wash your fruit
Cut the fruit into bite size pieces
Arrange as you would like over a platter
Add dollops of the goat cheese.
Honey lime dressing
Whisk both ingredients together
Pour over the fruit and cheese just before serving.
