Carrot Coleslaw and Light Coleslaw

Another Russian salad coming at ya! Did you know Russians love salads and mayo! I also loved coleslaw but was shocked and disgusted to learn that most of them have added sugar! I do not think it is necessary to the dish so I made my own "healthy" version. I guess both of these salads are versions of coleslaws!

For the Russian carrot salad, the ingredients are SO EASY. It's just shredded carrots, garlic, mayo and salt.

The secret it not to over do it with the mayo since the carrots emit their natural juices.

Similar to my Russian potato salad, DO NOT EAT IT RIGHT AWAY, it needs about an hour to sit.


For the "healthier" coleslaw, you'll need shredded cabbage. I would have done a combo of red and green but had a large green head and didn't want to have anymore go to waste if I got a red head of cabbage too.


The other ingredients are shredded carrots, diced red onion and lots of herbs.

The I added a tablespoon of apple cider vinegar and one spoon of mayo. I love mayo but I hate when there are globs of it, I really think proportions are key.

I also left this one for an hour before eating but for this salad its not necessary in my opinion.

Ingredients
Russian Carrot slaw
  • bowl of shredded carrots
  • 1 garlic glove
  • 1 spoon mayo
  • salt to taste
Light Coleslaw
  • bowl shredded cabbage
  • 1/2 cup shredded carrots
  • 1/3 chopped red onion
  • herbs: scallions, parsley, cilantro
  • 1 tbsp apple cider vinegar
  • 1 spoon mayo
  • salt to taste
Instructions
Russian Carrot slaw
combine all ingredients with pressed garlic in a bowl and mix
let it sit in the fridge for an hour
Light Coleslaw
combine all ingredients with pressed garlic in a bowl and mix
