Chicken Zucchini Fritters Recipe (4 Ingredients)

These Chicken Zucchini Fritters are easy, super flavorful and a great meal prep idea for a weekday dinner night. They are loaded with zucchini, ground chicken and dipped into flour to make them crunchy. All this yumminess is served with healthy creamy avocado yogurt dressing.

Where I’m from, in our family we use to make meat patties (kotlety in Russian) quite often. It would normally consist of ground beef/pork mix, chopped onions, cooked rice, and bread dipped into milk :) or even breadcrumbs.


That’s basically one of the classical kotleta recipes. Very tasty and juicy!


They can be made with ground beef, ground turkey or ground chicken and you can swap zucchini to carrots, cauliflower, broccoli, sweet potato and many more. This way you can have different tasty fritters/patties each time. Enjoy!

  • Wash and peel zucchini. Finely grate it into a bowl.


Then transfer and wrap it into a thin kitchen towel placed over a strainer and a bowl in the bottom. Twist the towel to wring out the moisture. 




  • In a separate bowl mix ground chicken, zucchini, and season with salt. 
  • Shape the mixture into medium-sized balls using your hands (make your hands wet before shaping the balls).
  • Prepare a smaller plate/bowl for your flour and dip each chicken fritter into it right before transferring them to the pan (use a spoon as the fritters are very soft and tender). 
  • In a medium skillet heat up olive oil and cook chicken fritters for 3-4 minutes both sides.
  • For the dipping sauce, simply mix all the ingredients in a bowl and you are ready to serve. Enjoy!

Ingredients


  • 1 lb ground chicken
  • 1 ⅓ cup zucchini grated
  • 1 tsp salt
  • 2 tbsp flour all-purpose gluten-free if desired
  • Olive oil for cooking

Avocado Yogurt Dressing

  • 2 avocado mashed
  • 3 tbsp Greek yogurt
  • ½ tsp salt
  • 1 tsp lemon juice
  • ¼ tsp garlic powder
  • 3 tbsp parsley chopped

Tips

  • For more flavor add chopped onion, garlic, spinach to your ground chicken mix.
  • Freeze them. Once the fritters are cooked, let them cool completely, transfer to a glass container with a lid and pop them into the freezer. They'll be good for up to 2 months.

    I think a beaten egg would hold the mixture together.

      no need, as the mixture is made of mainly ground chicken and zucchini and dipped in flour it holds it shape just fine. But if you reduce the amount of chicken and add more zucchini, then yes I'd suggest to add egg.

    Why do you peel the zucchini? You lose the nutrients & vitamins doing that.

      you're right, you can do both ways! depending on which kind of zucchini you have, if more young then ofcourse it's better to leave it unpeeled.
