Ingredients


  • Sliced Chicken Thighs (I used pre-marinated)
  • 1 can Corn
  • 1 can Fire Roasted Tomatoes
  • 1 can Black Beans
  • Southwest Seasoning

For Topping

  • 1 cup Mexican Blend Cheese
  • 1 can Sliced Black Olives (Optional)

Instructions


Preheat the oven to 400F.
In a casserole dish, mix all of the above ingredients.
Top with the cheese and black olives.
Bake for 45 minutes or until the chicken thighs are fully baked.

    This recipe is NOT no carb! Title reads "3 No-carb Meals for When You're Feeling Lazy! " Corn is carbs ! Beans are carbs. It couldn't be more carb loaded if you tried .

      You are so right. I am a diabetic and extremely carb sensitive and they have a nerve to not post any nutritional information. For those of us who have D2, this is a fraud.
