Ingredients

  • Sliced Chicken Thighs (I used pre-marinated)
  • 1 can Corn
  • 1 can Fire Roasted Tomatoes
  • 1 can Black Beans
  • Southwest Seasoning
For Topping
  • 1 cup Mexican Blend Cheese
  • 1 can Sliced Black Olives (Optional)
Instructions

Preheat the oven to 400F.
In a casserole dish, mix all of the above ingredients.
Top with the cheese and black olives.
Bake for 45 minutes or until the chicken thighs are fully baked.

    This recipe is NOT no carb! Title reads "3 No-carb Meals for When You're Feeling Lazy! " Corn is carbs ! Beans are carbs. It couldn't be more carb loaded if you tried .

      Yep, ALL three of these recipes are whacked. The pictures don't match the recipes and another of them has corn in it. NOT no carb even if it is a 1/4 can.

    I am not carb sensitive but I definitely agree this recipe is definitely not for diabetics. I found the recipe to be vague, how many chicken thighs and what size casserole? Any feedback Haley? Thank you
