Southwest Chicken Bake

Ingredients
- Sliced Chicken Thighs (I used pre-marinated)
- 1 can Corn
- 1 can Fire Roasted Tomatoes
- 1 can Black Beans
- Southwest Seasoning
For Topping
- 1 cup Mexican Blend Cheese
- 1 can Sliced Black Olives (Optional)
Instructions
- Preheat the oven to 400F.
- In a casserole dish, mix all of the above ingredients.
- Top with the cheese and black olives.
- Bake for 45 minutes or until the chicken thighs are fully baked.

This recipe is NOT no carb! Title reads "3 No-carb Meals for When You're Feeling Lazy! " Corn is carbs ! Beans are carbs. It couldn't be more carb loaded if you tried .
I am not carb sensitive but I definitely agree this recipe is definitely not for diabetics. I found the recipe to be vague, how many chicken thighs and what size casserole? Any feedback Haley? Thank you
