Nut and Date Chicken Cutlets

This delicious nut and date chicken cutlet recipe is one of my absolute favorites. It's great for a mid week meal with some rice, and freezes great for meal prep. I love the combination of flavors and the sweet smells that waft out of the oven from this dish. You can leave the chicken in the oven for a few minutes on grill if you want to brown the chicken a little on the top, but make sure not to over do it, as the chicken can easily become dry! Store in an airtight container for a maximum of 4 days, heat up in the microwave for a few minutes and you are ready to go!

Ingredients

  • 1/4 cup red wine vinegar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 cloves garlic, minced
  • Juice of 1 large orange
  • 8 dates, halved and pitted
  • 2 tbsp slithered almonds
  • 3 kg chicken thigh cutlets
Instructions

Preheat the oven to 180 degrees and prepare a small, square oven dish.
In a large bowl, mix together all ingredients except for the chicken until well incorporated.
Add in the chicken and use a spoon to help toss the sauce aroud the chicken to marinate it.
Place the chicken in the prepared dish and pour the sauce on top.
Cover the dish with aluminium foil and cook for 30 minutes. Remove the foil and cook for a further 30 minutes or until the juices run clear.
