This flavorful chicken recipe is an absolute family favorite. It's super quick, healthy and delicious, making the perfect dish for family dinner. I love cooking chicken because I can always count on the fact that I'll have some frozen at home, saving a trip to the supermarket and making a nutritious and enjoyable meal at the same time. This dish is also very suitable for meal prep. Freeze on a bed of rice with some stir-fried vegetables in individual portions and you've got yourself a delicious ready-made meal that will freeze well and will be perfect after a few minutes in the microwave.

Ingredients

  • 4 tablespoons olive oil
  • 3 white onions
  • 7 whole cloves of garlic, peeled
  • 1 kg boneless chicken thighs
  • 1 tablespoon yellow mustard
  • 1.5 cups onion soup broth
  • 2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 bay leaves
Instructions

Roughly grate onions.
On high heat in a large saucepan, heat olive oil and add in the onion and garlic. Fry for abut 5 minutes with a wooden spoon until the onions begin to soften.
Cut the chicken into strips about 7 cm (2.8 inches) wide and stir them into the onion.
Let the chicken fry until it turns white on the bottom and pinky-white in the middle. Flip each piece and repeat the process, until the middle and both sides are white (this should only take a few minutes).
Add in mustard and stir until fully combined, followed by the onion soup broth, salt, pepper and bay leaves.
Cover the saucepan with a lid and let the chicken simmer on a medium heat for 40 minutes. Serve immediately.
