I miss working in restaurants.


It was so fun yet exhausting and I don’t think I’ve hustled like that since. Being on your feet for hours and hours. Dealing with annoying customers (just kidding, but sometimes they were fun to make fun of). And the best part…ALL THE FOOD!


I worked at a restaurant on Newbury Street in Boston all through college and one of their signature dishes, was the CBZ.


CBZ = Chicken + Broccoli + Ziti


It is just soooo delicious. A creamy delicious alfredo sauce seeping into all the nooks and crannies of the broccoli…mmmmmmmmm


I ate a CBZ at least twice a week while working at the restaurant. Yes, you could say I got a bit curvier during my time there. And yet ironically, never really tried making it myself.


Well, now that I’ve been messing around with keto, it gave me a great opportunity to give it a try!


Obviously, I omit the Z, but the recipe is identical otherwise. You can also substitute the Ziti for Fettuccine to keep it classic!


Vic Trick: Whenever pasta is involved, you’re going to want to use a pan with high edges, since you ALWAYS want to toss your pasta in the sauce before serving.


Cut some chicken breasts into small chunks and season with some salt, pepper, Italian seasoning, and paprika or cayenne. Place into a saute pan and cook until browned and mostly cooked through.

Add the broccoli and saute until tender. I added a little bit of chicken broth and covered it to steam it a little. You can also cook/steam/microwave the broccoli separately, but I’m lazy.

While that’s working, in a sauce pan over medium heat, add cream, butter, garlic, salt and pepper. Whisk until the butter is melted and the mixture has begun to lightly boil.


Adjust the heat to low and let simmer for about 2 minutes. Then remove from the heat and add parmesan cheese, whisking until smooth.

I used Skinny Pasta which blessed me with their low-carb fettuccine in my last Keto Box subscription. It was soooo tasty and I highly recommend to my people out there.

Pour your pasta into the chicken and broccoli pan, then add the sauce and stir to combine until everything is nice and coated.

And boom, just like that you have the tastiest thing in the whole world.

Ingredients

  • 1 pound chicken breast, cut into pieces
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper

  • 2 bundles of broccoli, cut into florets
  • 1/2 cup heavy whipping cream
  • 1/4 cup butter
  • 3 cloves garlic, minced
  • 1 cup grated parmesan
  • Pasta of your choice, cooked

    In number 5 they mentioned about to add sauce so the question is which sauce is that thanks

      Pretty sure it's the sauce you made in steps three and four. While the chicken and brocolli is cooking in one pan, you make cream sauce in another pan. In step five, you add your creeam sauce to the chicken and brocolli pan, along with the pasta.
