No fuss slow-cooked meal with no pre-cooking involved!


I looove my slow cooker. It’s saved our dinners (and my life to be honest 😅) countless times, especially before I was on maternity leave and had a full-time job. I love the ability of putting everything in a pot, leaving it in the fridge, the next day turn it on and, hey presto the dinner is ready by the time you walk back through the door. However, what always bugs me are those recipes where you have to do lots of pan-searing and pre-cooking, as it sort of defeats the point for me. So here is a recipe that takes literally 2 minutes to put together and it’s so delicious.


I often serve this alongside sweet potatoescut into slices, boiled for 10, roasted with olive oil for another ten, served with salt and lemony mayo.

Ingredients

  • 3 chicken breasts
  • 3 cloves garlic, crushed
  • ½ onion, diced
  • 6 or 7 cherry tomatoes
  • 1 tsp each of oregano, marjoran, thyme
  • 1 can chopped tomatoes
  • 10 black olives (optional), roughly chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 big handful baby spinach
Instructions

Lay the chicken breast (whole) in the slow-cooker and season with salt, pepper and crushed garlic.
On top of the chicken combine the rest of the ingredients minus the spinach.
Cook on high for approx. 4 hours, taking the lid off for the last half hour to reduce the sauce.
Once the chicken is cooked through and the sauce reduced, open the slow-cooker and add the spinach on top.
Leave the lid closed for 5-10 minutes to let the spinach wilt.
