For those who have been following along for even a hot minute, you know how much I LOVE breakfast!

If not, let me just tell you now that it is my absolute FAVORITE meal of the day! In fact, I could eat so-called ‘breakfast’ food for lunch, snacks, AND dinner! That’s how much I LOVE it!

You can find plenty of breakfast treats under my recipes tab, but today I’m sharing one of my all-time FAVORITES!

Waffles have always been a ‘special treat for me. Mom would rarely make them as a kid, and when she did it always seemed like such a process.

Divide the eggs…sift the flour…scoop the precise amount of batter into the waffle iron and if you didn’t what a mess! …oh and then you had to clean the waffle iron. UGH!

It just seemed like a lot of work, so like I said, I only made them on special occasions.

Ingredients

  • 1 3/4 cup flour
  • 1 Tablespoon baking powder
  • 2 Tablespoons white sugar
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 1/4 cup milk
  • 1/2 cup melted butter
  • 1 teaspoon vanilla
Instructions

Preheat waffle iron.Combine eggs, milk, and vanilla in a large mixing bowl. Whisk until frothy and completely combined. Set aside. Combine flour, sugar, baking powder, and salt in a medium bowl. Pour the dry ingredients in with the wet ingredients and whisk until just combined. Fold in the melted butter until combined. **DO NOT OVER STIR.Spray the waffle iron with non-stick cooking spray. If making regular-sized waffles-fill a 1/2 cup measuring cup with the batter. If making mini waffles use a 1/4 cup measuring cup. Lift the lid of the waffle iron and pour the batter onto the center of the iron. Close the lid. Allow the waffle to cook for 4-5 minutes or until golden brown. NOTE: Most waffle irons will have a light that shuts off when the waffle is done. If you prefer your waffles crispier you will need to leave them in for a bit longer. Remove the waffle from the iron with a fork. Serve immediately.NOTE: This recipe makes 6 regular-sized waffles or 10 mini waffles.
