Why Boozy Waffles? Well, the first response I have is, why not? Boozy Waffles are always a good idea, whether it's breakfast, brunch, brinner, late-night drunken snack, and everything in between. This particular spiked stack was inspired by Mother’s Day. I wish I knew how many PB&J sammies my mom made me growing up. Now, it’s my turn to make her something PB&J and I wanted to go above and beyond a sandwich. The waffles have peanut butter whiskey in them and the strawberry compote in infused with strawberry liqueur. And, of course, it wouldn’t be complete without a generous drizzle of PB whiskey syrup. I hope you and your family enjoy these mama approved waffles.

Ingredients
For the Waffles
  • 2 cups Buttermilk Pancake/Waffle Mix (prepared as instructed)
  • 4 TBSP Peanut Butter Whiskey, divided
  • 1/3 cup Peanut Butter
For the Strawberry Compote
  • 3 TSP Strawberry Liqueur
  • 1 LB Strawberries, cleaned and trimmed
  • 1 TBSP Cornstarch mixed with 3 TBSP Water
  • 1/4 cup Sugar
  • 1 TBSP Lemon Zest
For the PB Whiskey Syrup
  • 1 cup Pure Maple Syrup
  • A dash of Vanilla Extract
  • Optional: Powdered Sugar for serving
Instructions
For the Waffles
Add 2 TBSP of peanut butter whiskey and 1/3 cup of peanut butter to the waffle batter. Stir to combine.
Pour into preheated waffle maker and cook until golden brown.
For the Strawberry Compote
While the waffles cook, add the strawberries, sugar, cornstarch/water mixture, lemon zest, and strawberry liqueur to a small saucepan and bring to a simmer over medium-high heat, stirring regularly.
Simmer for 5 minutes and take the pan off the heat. The sauce will continue to thicken while it sits. I recommend letting it sit for at least 5-10 minutes, allowing it plenty of time to thicken.
For the PB Whiskey Syrup
Meanwhile, add maple syrup, remaining peanut butter whiskey, and vanilla extract to a separate small saucepan and bring to a simmer over medium-low heat. Allow it to simmer for 5-10 minutes. You should still be able to taste the whiskey flavor, but it will muted and not overpowering.

      you just skimmed fast like me. you are getting peanut butter whiskey. I have not seen this yet but I have not looked for pb whiskey. Seeing how much Im love pb I might need to go look for this.
