Today, we’re making Chicken and Waffles for One!

Fun fact about me…if chicken and waffles is on a restaurant menu, there’s a 100% chance that I’m ordering it. But I never used to make it for myself at home, because waffles have always seemed like too much hassle for me. And, it always overwhelms me with how many waffles recipes tend to yield.


But then I cracked the code to scaling this beloved meal down, and that brings us to this moment.

Let’s start with the chicken. I’m totally cheating for the chicken, and that’s totally ok. I like to use store bought breaded chicken tenders right from the freezer section of the grocery store. There’s no shame in that! There’s a brand called Just Bare that comes really close to Chick-Fil-A (in my opinion), and the chicken tastes so fresh and delicious. Under any other circumstances, you wouldn’t know they were frozen. Regardless, we’ll get those baking and get working on our waffle.


To make our waffle, we need some flour, cornstarch, sugar, baking powder, and salt. We’ll whisk those together. Then, we’ll whisk together a separate mix of wet ingredients: warm milk, melted butter, vanilla, and an egg. We’ll combine the two together until they’re just mixed, and a lumpy batter is totally ok. Then, we’ll cook it in our waffle iron based on your machine’s instructions. Every iron is different.

Depending on the size of your waffle iron, there may be a little bit of batter left over. That’s ok! Just make another mini waffle to snack on or set aside for later.


Once our waffles and chicken are cooked, we’ll make a quick honey butter to drizzle all over both. We need some butter, a squeeze of honey, a shake of chipotle hot sauce, and a tiny pinch of salt. Pop it in the microwave for a couple of seconds to melt together. Then make sure that sauce touches every piece of chicken and waffle that it can.

For a semi homemade, single serve meal; this chicken and waffles is *chef’s kiss*. The waffles are light and fluffy. The chicken is perfectly savory and crispy. The honey butter has a nice sweetness and subtle heat to it that ties everything together. It’s decadent and nostalgic all at the same time!

Ingredients
For the Chicken and Waffles:
  • 2-3 frozen breaded chicken strips, baked according to package directions (I use Just Bare brand)
  • ½ cup all purpose flour
  • 2 tbsp cornstarch
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/8 tsp salt
  • ½ cup warm milk (I used 1%)
  • 1 tbsp unsalted butter, melted
  • ¼ tsp vanilla
  • 1 egg
For the Honey Butter Drizzle:
  • 1 tbsp unsalted butter
  • 1 tsp honey
  • ¼ tsp chipotle hot sauce (I used Cholula)
  • Salt, to taste
  • Aleppo pepper, for garnish (optional)
Instructions

Make the waffles: To a mixing bowl, add flour, cornstarch, sugar, baking powder, and 1/8 tsp salt. Whisk together and set aside.
In a separate mixing bowl, add warm milk, melted butter, vanilla, and egg. Whisk together until fully combined. Pour wet mixture into dry mixture, and mix until just combined. It’s ok if the batter is lumpy.
Cook waffle mix in a waffle iron according to your machine’s directions. Depending on the size of your waffle iron, if you have any batter left over, use it to make a small snacking waffle.
Make the honey butter drizzle: Add 1 tbsp butter, honey, hot sauce, and a pinch of salt to a small bowl. Microwave for 15-20 seconds until the butter is melted. Mix well to combine.
Assemble the plate: Place waffles on a plate. Top with chicken strips. Drizzle chicken and waffles all over with honey butter. Garnish with aleppo pepper, if desired. Enjoy!
Tips

  • *The honey butter is not spicy at all, so feel free to add some extra hot sauce if you want more heat.
  • *When warming the milk, we don’t want it hot because it will scramble the egg. Just microwave it until it’s lukewarm. Warm milk helps to keep the butter from seizing back up when mixing the wet ingredients for the waffles.
