Super easy and fluffy Pancake Mix Protein Donuts with just add water pancake mix, protein powder and Greek yogurt too. Baked high protein Kodiak pancake mix donuts are great for a healthy dessert, breakfast and post workout treat.

Okay not going to lie, I was actually really surprised with how fluffy these pancake doughnuts turned out to be.

These might actually even be fluffier than my normal protein donuts from scratch; I guess pancake mix does do wonders!


Ingredients for Pancake Mix Protein Muffins

These pancake mix protein donuts are made with just 5 ingredients and are perfect for a quick hacky high protein breakfast recipe!


  • Protein Pancake Mix – I used the Kodiak Cakes Protein Pancake Mix for these donuts – both in the Buttermilk and Dark Chocolate flavors.
  • I’ve also tried the plant based red velvet protein pancake mix from ProteinWorld for this recipe, and it came out fust as fluffy. They have other flavors too and a Vegan Pancake Mix which would work perfectly here as well. HAYLSKITCHEN gets you a discount on ProteinWorld.
  • You can also make these donuts with any other just add water pancake mix.
  • Vanilla Protein Powder for extra high protein donuts, and also replace the sweetener.

Ingredients

  • 1 cup Protein Pancake Mix, weighed 100g
  • 1 scoop Vanilla Protein Powder, 30g, ⅓ cup
  • ⅓ cup Almond Milk, 80ml
  • ¼ cup Non fat Greek Yogurt, 56g
  • 1 Egg
Glaze:
  • 3 Tbsp Chocolate Chips, Sugar-free recommended, 42g
  • ¼ tsp Coconut Oil
Instructions

Preheat oven to 350°F and spray a 6-cavity donut pan with cooking spray to grease.
In a large bowl, whisk together milk, Greek yogurt and egg.
Add in protein pancake mix and protein powder and fold to combine.Don’t over-mix or donuts will be dense.Batter should be fairly thick; Add 1-2 Tbsp water if it’s too thick, or 1 Tbsp more pancake mix if it’s too runny.
Divide the batter among donut pan cavities, about ⅔ way to the top.
Bake for 13-15 minutes. A toothpick inserted into center should come out dry.Cool for 5 minutes, then remove from pan. Transfer to a wire rack to cool completely.
Glaze:
Place chopped chocolate chips and coconut oil in a large microwave safe bowl and microwave about 45 seconds, stirring halfway, until completely melted.Allow to cool slightly.
Use spoon to spread chocolate on top (rounded) side of donut.
