So ever since my daughter created her delicious homemade donuts, I've been dying to create my very own. I even ordered different silicone donuts baking molds because they come highly recommended when it comes to baking your own donuts.

I'm a blueberry lover and I wanted to create something for National Blueberry Month that would not only scream blueberry deliciousness but also taste like Summer in your mouth.


These donuts are low-carb and if you follow me on Instagram then you know I've even replaced my baking sugar with this one. Which is so much better and healthier on so many levels and it is Keto friendly.

I have to say at first I wasn't sure if I could pull these off, after all it did feel a little intimidating even for a regular baker like me, but when it comes to baking and creating you have to make mistakes to perfect your recipes. In this case I was happy with just how easy these Blueberry Almond Donuts were to make and even happier that they are Low Carb!


If you're a blueberry, lemon and almond lover like me, then these are perfect! They're light and airy and full of flavor without the guilt.

Ingredients
  • 2 cups of Flour
  • 3/4 cups of PureCane Baking Sugar
  • 1/4 Nutmeg
  • 1/4 Cinnamon
  • 1/2 tsp Salt
  • 3/4 cup Almond Milk
  • 1 3/4 tsp Lemon juice
  • 2 beaten Eggs
  • 2 tbsp melted Butter
  • 3/4 cup chopped Blueberries
  • 2 1/2 cups powdered sugar
  • 1/4 tsp almond extract
  • chopped almonds (optional)
Instructions
Instructions
Preheat oven to 425.
Combine top 6 ingredients + chopped blueberries if desired in large bowl.
Add milk, eggs & butter. Stir & fold in blueberries.
Fill each ring about 2/3.
Bake about 8 to 11 minutes.
Let them cool in pan for 5 to 10 min.
*For glaze cook fresh blueberries, 1/4 tsp almond extract, 1 1/2 tsp lemon juice over medium heat until blueberry skins pop, strain the solids, leaving only the juice. Whisk powdered sugar. Dip cooled donuts in the glaze place on wax paper & top with chopped almonds if desired.

    After perusing your recipe I am confused by your reference to Keto. The use of flour and processed sugar does not fit the parameters of Keto.

      They're low carb which is still considered keto as long as you're using low carb ingredients, for instance you can replace regular flour for almond flour if needed, but PureCane baking sugar is an all natural zero calorie sugar replacement.
