Cinnamon Palmiers

Palmiers are one of my favourite little treats because they are incredible easy to bake and they are oh so versatile. A palmier is a French biscuit which translates to 'palm tree leaf' which is kind of what they look like! They are based on usually puff pastry or shortcrust pastry with a light sweet or savoury filling. They're crispy, and flaky and absolutely delicious. They look very impressive to serve at parties and gatherings, little do your guests know that they whip together in no time at all! I've used homemade shortcrust pastry for these however you can use store bought either puff pastry or shortcrust, the recipe stays exactly the same!

Roll out pastry (or unfold if using store bought)

Make cinnamon sugar

Sprinkle sugar evenly over rolled pastry then tightly roll each side to the middle

Cut into pieces

Place onto lined baking pan and bake

Ready to serve!

Ingredients

  • 1 sheet puff or short-crust pastry, store-bought or homemade
  • 1/3 cup sugar (65g)
  • 1 tsp cinnamon
Instructions

Unroll your chosen pastry and roll out into a square / rectangle roughly 12 inches (30 cm) each side. I used my kitchen ruler as a guide, don't worry if the edges are not perfectly straight.
Mix together sugar and cinnamon and evenly sprinkle over pastry. Using the rolling pin, press the sugar into the pastry. Lightly score the middle point of the pastry as a guide. From the longer edge of the pastry, start rolling the pastry as tightly as you can into a log until you reach the middle point. Do the same with the opposite side until the two halves meet. Tightly wrap the log in baking paper and place into the freezer until very firm (about 15 minutes).
Pre-heat the oven to 190 C (375F) and line a baking pan with baking paper. Take the pastry out of the freezer and cut into 1 cm (0.4 in) pieces and place face cut side up onto baking pan. Place in oven and bake for 6 minutes, then rotate and bake another 6 minutes or until lightly browned. Transfer to cooling rack to cool completely. Serve and enjoy!
