This meal is warm and comforting – a perfect fall dinner. It makes an easy meal prep option for lunch the next day as well! I love this recipe because it has protein, healthy carbohydrates and vegetables all in one skillet.
What You Will Need:
- Smoked Sausage – I prefer to use skinless sausage because I don’t like the chewiness of sausage casings.
- Bell Peppers – Any color will do! I used red and orange bell peppers this time. Play around with your favorites.

- Baby Potatoes
Let’s Make This Simple Sausage Skillet with Onions, Peppers, and Potatoes!
You may have noticed that there are very few ingredients needed to make this recipe. Another bonus! Let’s add up the bonuses to this recipe: 1. one skillet, 2. few ingredients, 3. quick clean-up!
First, you will brown and cook the sausage. To make life easier, I like to brown the sausage whole and then cut into slices. Set aside the cooked sausage. Next, add butter and diced potatoes to the skillet and cook on medium heat for 8 minutes.
Now its time to add in the peppers and onions. Continue cooking on medium heat for 10 minutes with the skillet covered. Stir frequently so the vegetables don’t stick to the bottom of the skillet.
Finally, add the sliced sausage back to the skillet. Cover and cook for about 3 minutes to heat up the sausage and meld the flavors together. Grab a big bowl and enjoy!

- 14 oz. smoked sausage
- 2 Tablespoons butter
- 1 lb. baby gold potatoes diced
- 1 red bell pepper, sliced
- 1 orange bell pepper, sliced
- 1 yellow onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
Directions
- In a skillet, brown and cook the sausage according to package directions. Remove sausage and set aside.
- Add butter, diced potatoes, salt and pepper to the skillet. Cook on medium-high heat for 8 minutes until potatoes begin to soften. Do not fully cook them.
- Add garlic, onions and peppers to the skillet. Stir to mix well and cover with the lid. Cook on medium heat for 10 minutes, stirring occasionally.
- When the potatoes are cooked through and the onions and peppers are tender, add the sliced sausage back to the skillet. Mix well and heat for about 3 minutes.
Notes
