Savory sausage stuffing bites are an easy appetizer to make and can be prepared ahead and frozen. They’re popular bites at every party.

Whenever I make appetizers, my rule of thumb is to make them no larger than two bites. Of course there’s exceptions like sliders or mini grilled cheeses, etc, but more often than not, I like to follow the two-bite rule.

When it comes to entertaining, appetizers, hands down, are my favorite thing to prepare. Sometimes when we host a party, my menu consists of all appetizers. I love small little helpings, and I love variety. Lots of options. And I think our guests like it that way, too.


What makes things easier when preparing dishes for entertaining, is when most things can be made ahead of time. I’m all about starting the party prep a few days out, and I’ve even been known to make a recipe and then freeze it until the day of the party when all is left is to do is warm it up. I feel so organized when I have made-ahead appetizers stored in the freezer, so I can pull them out for that impromptu gathering. Feels pretty good, and certainly takes the stress out of entertaining.

With the exception of those little pigs in a blanket apps that I serve even at the fanciest of parties that we host ( I do serve them on a silver platter to up the ante ), the sausage stuffing bites with a cranberry mustard dipping sauce are absolutely a close second in popularity. I never have any leftovers, and I always get asked for the recipe. And don’t think for a second that I only serve them when we entertain – my family loves these savory bites too, making them a perfect hors d’oeuvre to serve on Thanksgiving before everyone sits down for the big feast.

Ingredients

  • 2 1/2 cups store bought stuffing I prefer Pepperidge Farm
  • 1/2 pound hot Italian sausage
  • 1/2 pound mild Italian sausage
  • 1/2 cup shredded Gruyere cheese
  • 2 eggs beaten
  • 1/3 cup chicken broth
  • 1/2 tsp ground black pepper
Cranberry Mustard Dipping Sauce
  • 1 14-ounce can jellied cranberry sauce
  • 2 Tbsp whole grain mustard
  • 2 Tbsp brown sugar packed tablespoons
Instructions

Preheat oven to 350 degrees.
Combine all sausage stuffing ingredients in a mixing bowl and combine with your hands.
Line a baking sheet with parchment paper.
Form 1 1/2 inch balls, either using an ice cream scoop or your hands. You should get between 34-40 sausage bites.
Bake in oven for 25-30 minutes or until browned on top. Serve warm or at room temperature.
Cranberry Mustard Dipping Sauce
Combine all ingredients in a small saucepan over low heat.
Whisk until sugar is dissolved and sauce is smooth.
Let simmer 5 minutes, then pour in a bowl. Serve warm or at room temperature.
Can be made ahead of time and stored in an airtight container in the refrigerator for up to a week.
