Café Rio Pork Burritos Enchilada Style

There’s a restaurant in Utah called Café Rio. It is Mexican cuisine and one of our favorite places to dine out at when visiting Utah. The restaurant chain is expanding across the United States but currently is not near where we live. We’ve scoured the internet looking for a similar tasting recipe and finally came up with our own. It’s not quite the same- but tastes good enough that we love it. We have these burritos at least twice a month.

Cafe Rio style pork burritos…enchilada style-


Ingredients for the Pork:

•2 pints bottled Pork. (We bottle our own.)

•1 - 4 ounce can green chiles

•1/2 cup brown sugar

•3 cloves garlic, minced

•1 can red enchilada sauce. (We use mild.)

•1/3 cup Dr Pepper


Ingredients for the Rice:

•2 cups rice

•1 table spoon olive oil

•1/4 tsp salt

•Fresh cilantro 

•4 cups water

•2 tbs Lime juice 


Other ingredients:

•Tortillas

•Shredded mozzarella cheese

•Green enchilada sauce

Combine the pork, green chiles, brown sugar, garlic, red enchilada sauce and Dr Pepper in a pot and bring to a boil. Simmer, stirring occasionally, to cook out the liquid. 

While the pork is simmering, prepare the rice. 

2 cups rice

1 table spoon olive oil

1/4 tsp salt

Fresh cilantro 

4 cups water

2 tbs Lime juice 

In a large frying pan, add the olive oil and rice. Cool on high until the rice starts to brown. Add 4 cups water, salt, chopped cilantro , and lime juice. Cover and bring to a boil. Once boiling, turn to low, cook for 15 minutes.

Build your burritos. I like to set up a burrito building station. You’ll need your pork, rice and the following ingredients:

Tortillas

Shredded mozzarella cheese

Green enchilada sauce

Preheat oven to 350 degrees. 

Put about 4 tablespoons green enchilada sauce in the bottom of 2 9x13 casserole dishes.

On your tortilla, place a scoop of pork, rice and shredded cheese, topped with a spoonful of green enchilada sauce. Roll it up and place in the casserole dish.

Café Rio Burritos are made with black beans or pinto beans. We generally don’t add beans to our burritos but if you do- this is where you’ll add them/ during the layering phase.

This recipe makes between 10-12 burritos, 5 or 6 will fit great in each dish. 

Once your dish is full of burritos, cover them with the remaining green enchilada sauce and sprinkle with shredded mozzarella cheese. 

Bake for 25 minutes @ 350°F.

Some great optional toppings:

Avocado or guacamole 

Sour cream

Smoked jalapeño sauce 

Different hot sauces 

Salsa

Ingredients

Burrito filling

  • Pork
  • rice
  • tortillas (10-12) 10”
  • shredded mozzarella
  • Green enchilada sauce- large can (28 oz)

Tips

  • These make great left overs. When heating up in the microwave- make sure to cut up the burrito as this helps it heat evenly all the way through and quicker.
