Grilled Lamb Chops on the Barbie

This is one of my healthy favorite summer dishes and a big hit with guests!

Start off with a pack of lamb chops. This is the neck piece. I've also made this with the ribs. They both come out equally delicious and I've asked others to vote on which one is better but no one could choose. The ribs come out more crispy because it's a thinner piece of meat so people that like the char are fans, the neck comes out more tender.

Slice up some onions and mix it together in a bowl with washed lamb chops, peppercorn and salt.

Then slice up some tomatoes and add them on top.

Then sprinkle with some Worchestershire sauce.

Marinate for 4 hours swirling the bowl every 30 minutes or so.

Then throw those bad boys down the barbecue.

For the lamb neck, the thick cut, you want to cook for 15 minutes aside. For the ribs you wanna do wanna do 10

Sometimes I throw the marinade on the grill too on a plate of foil to enjoy after the fact. This goes really well with plum or pomegranate sauce.

Ingredients

  • Lamb chops
  • Peppercorn

  • Sliced tomato
  • Sliced onion
  • Worchestershire sauce
Instructions

Wash and season the lamb chops
Place into a bowl with the seasoning and marinade
Marinade for 4 hours stirring the bowl occasionally
Throw around the grill for 15 minutes a side
