I'm always looking for new and delicious ways to get a lot of vegetables in. My husband and I both enjoy a wide variety of cuisines, but sometimes a salad or the same old dish just won't cut it. Enter this equal parts flavorful, delicious, and nutritious egg roll bowl. It can be ready in a pinch, and is easy enough to add whatever vegetables to that are camping our in your refrigerator. If you're like me, you usually have quite a few sad looking items in there : D.

Toddler-Approved Egg Roll Bowl
Recipe details
Ingredients
- ▢ 1 pound ground beef (or ground chicken or turkey)
- â–¢ 1 (9-ounce) package raw coleslawÂ
- â–¢ 2 scallions, thinly slicedÂ
- â–¢ 1 small head broccoli
- â–¢ 1 tablespoon peeled freshly grated ginger
- â–¢ 2 tablespoons soy sauce
- â–¢ 1 tablespoon sriracha
- â–¢ optional black sesame seeds
Instructions
- Â Stir soy sauce and sriracha together with spoon in small mixing bowl until smooth. Set aside.
- Cook Beef & Cabbage: Cook ground beef in large pan over medium-high heat until browned and crumbled, breaking up meat with stiff utensil, about 5 minutes. Leaving beef and fat in pan, stir in coleslaw mix until cabbage is wilted and tender, about 5 minutes.
- Add Finishings: Reduce heat to medium-low. Stir in prepared sauce (soy sauce and sriracha) and ginger until well-mixed, about 1 minute. Turn off heat. Stir in sliced scallions, and optionally garnish with sesame seeds.Â
- Serve promptly while hot.Â

when you say coleslaw, do you mean the cabbage-mayonnaise mix that is coleslaw or do you just mean grated cabbage?
there is no broccoli in the recipe yet you show it being added in the video
