Slow Cooker Pulled BBQ Brisket

Boy oh boy, this slow cooker pulled bbq brisket is just AMAZING! All you have to do is rub the brisket down with the spice rub, dump an entire bottle of bbq sauce on it, and let it sit in the crock pot for six to eight hours. It is so easy! Serve this slow cooker pulled BBQ brisket warm with rice, on hamburger buns, or eat it by itself! You can store this in the refrigerator in an airtight container for up to four days. You can also freeze this in a freezer safe container for up to three months.

Ingredients
Spice Rub
  • 2 tbsp Parsley
  • 1 tbsp Garlic Powder
  • 1 tsp Salt
  • 1 tsp Ginger
  • 1 tsp Nutmeg
  • 1 tsp Pepper
Brisket
  • 2-3 lb Beef Brisket
  • 2 cups BBQ Sauce (whatever is your favorite)
  • 1/4 cup Red Wine Vinegar
  • 1/4 cup Brown Sugar
  • 1/2 cup Water
Instructions

Combine all the ingredients of the spice rub together.
Remove the brisket from the refrigerator and rub it down with all of the spice rub.
Let the brisket come to room temperature for about an hour.
Place the brisket in the slow cooker.
Combine the BBQ sauce, red wine vinegar, water, and brown sugar.
Pour the mixture over the brisket, making sure to fully cover the meat.
Cover and cook on low for 6-8 hours.
Switch the cooking setting to high for the last 30 minutes of cook time.
Remove the brisket and shred it with two forks.
Add the shredded brisket back to the sauce, and stir to combine.
Serve warm!
