Little chicken parcels with a classic combination.


This is a childhood favourite of mine! It’s a modified recipe as my mum used to make it with veal, Italian cheese and super thin bacon, but I adapted it with British ingredients and it still turned out so so tasty so I had to share the recipe with you guys!


These roll-ups (called “involtini” in Italian) are great accompanied by some green veg and some polenta or potato mash! They will soak up all the delicious white wine sauce, which for me is the best part. Make sure to also have some bread on the side to soak up any remaining sauce from the pan! Cook's perks ;D

Ingredients

  • 17.5oz chicken breast, cut into super thin slices
  • 1.7oz cheese, taleggio if you can find it or cheddar
  • 4 bacon rashers
  • 1/4 cup butter
  • Sprinkling of flour
  • Half a glass of white wine
Instructions

Flatten the chicken breast slices by either bashing them with a meat tenderizer, a heavy pan or a rolling pin. They need to be as thin as possible.
Lay each slice flat and put a bacon rasher on top trimming off any excess so it’s slightly smaller than the chicken.
Cut a cube of cheese and put that in the middle of the bacon. Roll each sizzler up length-wise and close it off by putting a small toothpick through it, from side to side. If you see one isn’t enough use two.
Once they are all rolled up, dust with plenty of flour.
Melt the butter in a pan and then add the floured rolls. Let them cook until browned all over, then add the white wine.
Let that reduce and season. Your roll-ups are ready to be served hot.
