Peach Jalapeno Jam

I do not know if anyone else has noticed, but peaches are delicious this year. My sister-n-law works at our local farmer's market and has been bringing me a bag of fresh peaches every Saturday, and I can not get enough of these perfectly sweet and juicy summertime fruits.


While I typically have been eating the peaches as a snack, this past weekend I decided to make a jam out of them to go with the fresh caught Mahi Mahi my husband brought home from a recent fishing trip.


I decided to add a diced jalapeno to the peaches, which gave the jam the perfect small amount of heat. This combination of sweet and spicy paired perfectly with the mild fish, but would also go great with pork or chicken.


Peach jalapeno jam is such a simple and quick recipe. Simply sauté peaches and jalapenos in olive oil, add sugar and apple cider vinegar and allow to simmer until thickened.

This beautiful jam can be stored in the refrigerator for up to one week.

Peach jalapeno jam is the perfect addition to brighten up fish, pork chops or chicken.

Ingredients

  • 2 medium peaches, skin removed and diced
  • 1 jalapeno, seeds removed and diced
  • 1 tbsp. olive oil
  • 2 tbsp. sugar
  • 1 tbsp. apple cider vinegar
Instructions

Heat olive oil in a medium saucepan over medium heat
Add diced Jalapeno and peaches, and saute' until softened, about 2-3 minutes
Add sugar and apple cider vinegar
Bring to a boil, and then reduce to low heat. Simmer for 10-15 minutes, until liquid has reduced and thickened
Smash peaches with a fork and stir
