Chocolate covered strawberries is one of those things, which always seems like such an indulgence, but it is actually a really easy thing to make. Here is how I make delicious chocolate strawberries. And although they are super easy to make, they are a crowd pleaser.every.single.time.

For the basic recipe, all you need are two ingredients, but there are details you can add to elevate and make chocolate covered strawberries even more indulgent.

Like I said, you only need two basic ingredients. Since you only need strawberries and chocolate, I look for the biggest and prettiest strawberries, plus I use the best possible chocolate.


Ingredients:

  • Ghirardelli Dark Chocolate Melting Wafers


Instructions:

  • Wash strawberries and pat dry.

  • Melt chocolate wafers in microwave, according to package instructions {basically melt in 30 second intervals, mixing in between until chocolate reaches silky smooth consistency}.
  • Dip strawberries in chocolate by holding berries by the stems.

  • Lay chocolate strawberries on a tray lined with parchment or wax paper.

Toppings:

Drizzle any desired dry toppings on strawberries while chocolate is still wet and tacky so the toppings stick. I used gold sanding sugar and white pearl sprinkles.

I love the sanding sugar. It’s the first time I have worked with it, and I have some ideas on how to use it for some spring treats.

Other dried toppings you can use include chopped nuts or coconut flakes. If you want to add additional wet icing on strawberries allow them to set {approximately 15 minutes} before decorating with another wet medium.


Stems:

Besides selecting the largest, oversized strawberries , I also prefer the ones with attached stems. Not only do they make great handles, but they look so beautifully organic as well. I have a hard time finding them in my area, but when I see them, I scoop them up and create a reason to indulge in chocolate covered strawberries.

Picks:

If you cannot find strawberries with stems, you can also use pretty picks. The picks will not only add a pretty accent to the berries, but they also add function to pick up the strawberries easily.

Make sure when you wash and pat dry your strawberries, you let the berries dry fully. The chocolate will adhere to clean berries at room temperature best. This prevents the strawberries from sweating and the chocolate will not separate from the berries.

I choose to use chocolate wafers instead of chocolate chips, because they are meant to be used for dipping and coating. Chips are made to retain their consistency so they are harder to melt fully, requiring Crisco or another additive to reach the smoothness needed. Wafers melt easily in the microwave and don’t require a double boiler.

Invariably you will have melted chocolate left over once all the strawberries are coated. Vanilla wafers, cookies and pretzels are always great to dip in melted chocolate as well to pair with the chocolate covered strawberries.

Chocolate covered strawberries are meant to be eaten fresh. They have a shelf life of 24 hours to 48 hours max before they start sweating and falling apart. Enjoy these incredibly delicious treats as soon as you can.
