Cheesecake Stuffed Strawberries

I made these for the Memorial BBQ we had and they were a hit. They are a combination of cheesecake meets strawberry that meets other fruit. The other fruit was blueberries so the dessert was patriotic looking. These are easy to make the most time consuming part is cut a section out of the strawberry. I decided to cut them in half and take a small section out. I didn't want to try to cut the middle out of the whole strawberry, I tried but apparently I am heavy handed in that are the berry ended up crushing on me. I am showing you the easiest way for me but if your gentle handed you can easily make them stuffed into the whole berry. Next time I make them I am going to drizzle chocolate on them or crushed graham crackers or vanilla wafers. Jut to pretty them up some more.

First you make the cheesecake mixture and mix it until it is creamy.

Add in the whipped cream and stir gently until incorporated.

I cut the strawberries in half and then I cut a V section from each berry. The chickens loved the bits I took out. No wasting on our little farm.

Then I put the mixture into a freezer bag and cut a hole in a corner. I squeezed a bit of the cheesecake filling onto each strawberry half. The I topped them with a blueberry for the holiday barbeque.

They really are delicious and refreshing on a warm Summer day.

Ingredients
Cheesecake stuffed strawberries
  • 8 ounces Cream Cheese, softened
  • 1/2 Cup Confectioners Sugar
  • 1/2 t Vanilla Extract
  • 1 Cup Whipped Topping
  • 1 Quart or Twelve Strawberries
  • 1 Pint Blueberries
Instructions
To make the Stawberries
Mix with a mixer confectioners sugar, vanilla extract and cream cheese until creamy.
Add the whipped topping and stir in gently until all is incorporated.
Cut the tops off of the strawberries and then cut each one in half and then cut a section out of the middle of each berry.
Either spoon a about a tablespoon of filling in to each strawberry half, or use a baggie with a hole cut in it to squeeze in to the strawberries.
Top with a blueberry.
Add additional toppings, optional.
Refrigerate until time to serve them.
