Sometimes a simple cookie is all you need. These pumpkin cookies are exactly what the doctor ordered. They are crispy around the edges with a nice chew in the center. They are buttery with the flavor of pumpkin and spice.


And if you’re looking for egg-free cookies, look no further! This is a no egg required recipe and you will not miss it. When it comes to quick and easy, the boxes are checked for both too!


To make: combine dry ingredients in one bowl, beat butter and sugar in another, combine wet and dry, then add pumpkin puree. The cookies take 5 minutes to whip up and 9 to 11 minutes to bake. All that’s left do do is to enjoy!!

Ingredients

  • 1 1/4 leveled cup all-purpose flour
  • 1/4 tsp. salt
  • 1 tsp. pumpkin pie spice
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 cup butter, room temperature
  • 3/4 cup granulated sugar
  • 1/4 leveled cup pumpkin puree
Instructions

Preheat oven to 350 degrees F.
Combine flour, salt, pumpkin pie spice, baking soda, and baking powder in a small bowl. Set aside.
In a separate bowl, beat butter and sugar until creamy. Add half flour mixture. Blend slightly to incorporate the flour. Add remaining flour, blending until crumbly. Add pumpkin puree. Stir until just blended. Drop by rounded tablespoon, 2 inches apart, onto ungreased baking sheets.
Bake for 9 to 11 minutes. Allow to cool on baking sheets for a minute prior to placing on cooling rack. To prevent cookie from softening, store refrigerated in an airtight container.
