Inspiration for This Pizza Recipe


Several years ago I was introduced to Thai Chicken Pizza with a recipe from Rachel Ray.

Let me tell you, it was divine and everyone who tried it loved it.

Certainly it was a regular recipe in our home for pizza night.

But one night after making Pad Thai, I had leftover peanut sauce and thought I’d create my own version of Thai Chicken Pizza with a peanut sauce.

Guess what?! It was a hit!!

In fact, we love it better than our original recipe.

This recipe is super simple to make using flatbread.

Naan bread and Greek pitas are great choices for a pizza crust.

However it’s also delicious with a homemade crust.

What Makes This a Thai Chicken Pizza

You may be wondering what makes this a Thai Chicken pizza?

Pizza certainly isn’t Thai.

But the same delicious foods I use in my Thai recipes are used to create a sensational pizza.

Fresh vegetables like cucumbers, red bell pepper, green onion, carrots, peanuts and cilantro combined with the chicken to take this pizza over the top.

And let’s not for get about the spicy peanut sauce that adds such an amazing flavor to this pizza.

How to Make a Thai Peanut Sauce

Thai Chicken Pizza isn’t complete without this Thai peanut sauce.

For this recipe, you’ll need creamy peanut butter, I prefer a natural peanut butter, fresh ginger root, garlic, soy sauce, rice vinegar, brown sugar, chili paste, and lime juice.

This Thai peanut sauce is the perfect base for the toppings on your Thai Chicken Pizza.

Plus this sauce is super simple to prepare.

Combine all of the ingredients and stir until smooth.

Then thin to desired consistency by adding 1-2 tablespoons of water.


What Toppings Do You Put on a Thai Chicken Pizza

Thai Chicken Pizza is so versatile.

To make it, you’ll need cooked chicken, Thai peanut sauce, mozzarella cheese, green onions, cucumbers, red bell pepper, peanuts and cilantro.

For the chicken I like to use rotisserie or leftover chicken, but you can also use canned chicken breast.

We love a recipe that’s flexible where you can use what you have on hand.

And if you’d like a little more spice, sprinkle on a few red pepper flakes.


Assembling Thai Chicken Pizza

Before you begin assembling your pizza, preheat oven to 425°F.

Place flatbread on a large baking sheet or a pizza stone.

Divide the Thai peanut sauce evenly between each individual pizza crust and spread the sauce over the flatbread, top with mozzarella cheese.

Place the vegetable toppings and cilantro on the Thai peanut sauce.

Top with cooked shredded chicken and honey roasted peanuts.

Bake in a preheated 425° oven for 8-10 minutes or until cheese is melted and crust is golden brown.

If you are using a homemade pizza dough, you’ll need to bake it for about 15-18 minutes.

Ingredients
Peanut Sauce Ingredients
  • 1/3 cup natural peanut butter
  • 1 tbsp. fresh grated ginger root
  • 1 tbsp. minced garlic
  • 2 tbsp. soy sauce
  • 1 tbsp. rice vinegar
  • 2 tbsp. brown sugar
  • 2 tsp. Asian chili paste (Sambal Oelek)
  • 1/2 lime fresh squeezed lime juice
  • 1-2 tbsp. water
Thai Chicken Pizza Toppings
  • 1 cup shredded mozzarella cheese
  • 1 cup cooked & shredded chicken I like to use rotisserie or leftover chicken
  • 1/2 cup thinly sliced cucumber
  • 1 red bell pepper thinly sliced
  • 1/4 cup thinly sliced green onion
  • 1/3 cup matchstick carrots
  • 1/4 cup chopped cilantro
  • 1/4 tsp. red pepper flakes optional
  • 1/3 cup honey roasted peanuts
Pizza Crust
  • 1 pkg. Naan or pita bread
Instructions
Preheat Oven
Place oven rack in center of oven and preheat oven to 425°.
Peanut Sauce
Place all of the peanut sauce ingredients except water into a small bowl. Stir until well combined. Then add in water 1 tbsp. at a time until desired consistency is achieved.
Assemble Thai Chicken Pizza
Place 4 flatbreads onto a large baking sheet.Evenly divide peanut sauce between 4 flat breads and spread to cover bread.
Top the peanut sauce with mozzarella cheese. If you like more cheese on your pizza go ahead and add to your liking.
Sprinkle shredded chicken on to each individual pizza and then the remainder of the toppings.
For a little more kick to your Thai chicken pizza sprinkle a few red pepper flakes over each pizza, if desired.
Bake Thai Chicken Pizza
Place Thai Chicken Pizza in a preheated 425° oven and bake for 10 minutes. Until cheese is bubbly.
Tips
  • This pizza is super quick and easy to make with any flatbread, but if you’d like a homemade pizza crust is also delicious.
  • You can use leftover chicken for this recipe or in a pinch canned chicken breast will also work.
  • Slice all of the vegetables to about the same thickness. I like to use my mandolin to help keep the vegetables uniform in size. This will help them to cook evenly.
  • Adjust the topping to your liking. This is great for kids to experiment in a new way with vegetables.

    I use Trader Joe’s sweet chili sauce for sauce . Toppings are chicken broccoli red pepper mushrooms green onion and peanuts top with Jack cheddar cheese . A favorite of familiy!
