Summer Pea Salad
Pea salad … a classic dish that is so often overlooked. Potato Salad and coleslaw often seem to steal the spotlight at , but a good pea salad can be a nice change to serve up at your next summer gathering.
This pea salad is light, refreshing and the ingredients in the salad combined together complement each other perfectly. You have the refreshing peas as the base, crunchy and slightly spicy red onions, sweet crisp apples and a hint of savory bacon.
Pea salad does not have to be plain and boring, this recipe proves that you can take an old classic and revive it into something refreshing and delicious!
To make this salad, start with a base of thawed frozen and drained peas. I highly recommend avoiding canned peas as they don’t have that beautiful vibrant green color and they lack the refreshing crunchy texture. No one wants a mushy pea salad.
Next add in the salad fixings. I like to finely chop all of the ingredients as close to pea size as possible. I find having all of the ingredients similar size makes the salad easier to eat and will incorporate more flavors into each bite.
Top with the dressing and gently stir until everything is evenly coated. You want to be careful not to crush the peas while tossing the salad.

Ingredients
For the Salad
- 2 1/3 thawed and drained peas
- 1 cup grated cheese (I use marble or cheddar)
- 2 finely chopped gala apples
- 1/3 cup finely chopped red onion
- 4 strips crumbled bacon
- 1/2 cup mayo
- 1 tbsp Apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large bowl add the thawed drained peas along with the chopped onion, apples, shredded cheese and bacon.
- In a separate bowl whisk together the mayonnaise, apple cider vinegar and salt and pepper to taste.
- Pour the dressing over the salad and gently toss until evenly incorporated taking care not to crush the peas.
- Serve and Enjoy!
