Israeli Pearl Pesto Couscous
Israeli or Pearl couscous is a very underrated food. It is basically a mini ball of pasta. Regular couscous is much smaller and more similar to rice even though it is technically made our of wheat. Not that I mind the regular couscous either! They are really both delicious.
Similar to rice, boil 2 parts water to 1 part couscous. I like to add salt and olive oil at this step. Boil and then lower to a simmer for 20 minutes until the water dissolves before fluffing the cooked couscous.
Once its cooled, a really quick and easy salad that is great for hosting is using pesto with pearl mozzarella balls. I personally like Trader Joes vegan pesto.
Then add some corn, I used grilled because it is summer and grilled fresh summer corn is just the best but canned or frozen would be fine too.
Chop 1/2 a red onion and a hand full of cherry tomatoes for a delicious and filling salad that is a great side for any bbq!

Ingredients
- 1 cup couscous
- 2 cups water
- 1/2 cup mozzarella pearls
- 1/2 chopped red onion
- 1 cup chopped tomatoes
- 1/4 cup pesto
- 1/2 cup corn
Instructions
- boil 2 parts water to 1 part couscous
- add salt and olive oil to the water
- lower to a simmer for 20 minutes until the water dissolves before fluffing the cooked couscous
- let cook and then add all other ingredients and mix
