A recipe for all the coffee lovers out there!


These cookies are so fun to make! I LOVE coffee so these cookies absolutely hit the spot. I used my favorite coffee brand Nespresso to make these. What's your favorite coffee brand? Let me know in the comments!


Topping them with chocolate is optional but...is it really?


Ingredients in Coffee Cake Cookies

You will need all-purpose flour, cornstarch (cornflour), baking soda, baking powder and salt. These will be added in one bowl together.



In the stand mixer you will need to add cold butter, brown sugar, regular granulated sugar, 1 egg and 1 egg yolk and finally the shot of espresso.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon cornstarch
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • 1 shot espresso
Instructions

Preheat the oven to 180°C/350°F.
In a bowl, mix the flour with the cornstarch, baking soda, baking powder and salt. Set aside.
In the bowl of a stand mixer, add the butter and sugar,
Beat together for about 5 minutes or until light and fluffy.
Add the eggs and beat for another minute.
Mix in the espresso.
Grab a spatula and mix in the flour mixture, one cup at a time.
Wet your hands and start forming the cookie dough into balls.
Flatten them slightly on the baking tray then bake them for 12 minutes.
Let cool and enjoy!
