Looking for easy St. Patrick's Day treats? This rainbow bark recipe is easy to make, and you can make it in advance since it stores easily. This is a cute St. Patrick's Day dessert for the office, for a school party, or just for fun at home!

Easy St. Patrick's Day Bark Recipe

My family is Irish, so I like to make some cute St. Patrick's Day snacks and desserts. When the kids were little, they made their Leprechaun traps.

Although they used my best jewelry to try to bait the little guy, he was always sneaky and got away!

Our days of making traps are over, unfortunately, but I still look for St. Patrick's Day treats to make them.


Although this is an easy St. Patrick's Day dessert, here are some tips to help you:

  • Be careful not to overheat the chocolate. It will get dry and taste burnt.
  • You can use a double boiler or the microwave. I prefer a double boiler so I don't accidentally overheat it. You can use your Instant Pot as a double boiler too! I also really like my Wilton chocolate melter.
  • I added milk to thin the chocolate chips to give it a softer texture.
  • You can omit the milk and add coconut oil for shiny chocolate. This makes the chocolate harder, so keep that in mind. Add one tablespoon of coconut oil per cup of chocolate.

This rainbow bark recipe is so easy to customize. Here are some ideas:

  • I used all milk chocolate, but you can use white chocolate or dark chocolate. It would also be cute with a layer of dark chocolate with white chocolate on top.
  • Use colored white chocolate if you want color. I prefer to use the colored chocolate instead of adding a colorant because some colorants can make the chocolate seize.
  • You can also add spoonfuls of alternating colors and use a spoon or butter knife to swirl them.
  • I used rainbow candy and marshmallows for a topping. You can also try St. Patrick's Day sprinkles, freeze dried rainbow marshmallows, M and M candy, crushed Oreos, Lucky Charms marshmallows, chocolate chips, or crushed Andes mints.

Ingredients

  • 12 ounces chocolate chips
  • 2 tablespoons milk
  • Cooking spray
  • Rainbow candy strips
  • 1/2 cup mini marshmallows
  • 2 tablespoons rainbow sprinkles
Instructions

Place the milk in a saucepan. Add the chocolate chips. Spray lightly with cooking spray and melt over medium heat. Watch closely so it doesn't burn and stir often.
Lay a piece of waxed paper on a cookie sheet. Spread the melted chocolate on the waxed paper.
Top the melted chocolate with sprinkles Cut the rainbow candy strips into thirds. Place the rainbows randomly around the melted chocolate. Then fill in with mini marshmallows.
Let the chocolate harden. Break into pieces when it's hardened.
Store your chocolate bark in an airtight container until ready to serve.
