Cabbage Soup

This 'detox' soup is the newest fad hitting social media with promises of weight loss. Some variations include ingredients such as ginger, turmeric, cumin, tomatoes, or lemon juice - but for my simple cabbage soup, we are just using veggies, liquid of choice, and seasoning of choice. Opt for whatever you have on hand and experiment next time.

I gathered up the basic soup starters - celery, carrot, onion, and our main ingredient, cabbage. Slice them up to your liking then add them to a bowl of veggie stock, chicken broth, or just water with bouillon cubes.

Bring the pot to a boil then cover with a lid and let simmer until all vegetables are tender & cooked through. Season with salt & pepper or bouillon.

  • 1 red bell pepper
  • 2 large carrots
  • 3 stalks celery
  • 1 small head of green cabbage
  • 4L veggie stock (sub chicken or water with seasonings)
  • pepper to taste (optional)

Bring a large pot to the stove and pour in your veggie stock or whatever base you are using for the soup
Chop the pepper, carrots, celery, and cabbage into bite sized pieces
Add the veggies to the pot then cover and place on high heat until the soup starts boiling
Once boiling, lower the temperature and let it sit for approximately 30 minutes
Serve and enjoy!
  • This soup tastes even better the next day and is a great meal prep option
  • Add veggie or chicken bouillon cubes for extra flavor
  • Throw in extra veggies if you have
  • Save your veggie scraps or meat bones to cook homemade veggie broth or bone broth as the base to dishes like this which helps reduce food waste
