Cabbage Roll Soup

Although the weather is starting to warm up, I was craving some warm cabbage rolls. Except it felt like way too much work so instead I made cabbage rolls into a soup. This recipe cuts your prep time & cooking time down in half and is just as delicious (if not more!). All you have to do is throw everything in a pot and enjoy.
Feel free to throw in more veggies if you have on hand - such as carrots or potatoes. If you are vegetarian you can omit the beef and it will become a tomato vegetable soup with rice.

Cabbage Roll Soup

Ingredients
- 1lb lean ground beef
- 1/2 head green cabbage, roughly chopped
- 3 garlic cloves, minced
- 1 cup crushed tomatoes
- 4-6 cups chicken or beef broth
- 3 celery stalks, diced
- 1 brown onion, diced
- 1/2 cup basmati rice
- 2 bay leaves
- Salt & pepper to taste
- Fresh parsley to garnish
Instructions
- Heat a large pot then add the ground beef, breaking it up with a wooden spoon
- Add the minced garlic, diced onions & celery, and chopped cabbage
- Mix together then add the crushed tomatoes and broth
- Rinse the basmati rice then add it to the pot
- Add 2 bay leaves then bring the soup to a boil then cover with a lid
- Let simmer until the rice is fully cooked (approximately 10 minutes)
- Add fresh parsley, salt, and pepper according to taste.
