I am working on increasing my protein intake throughout my whole day, but especially right away in the morning so I can start my day out strong and energized. So I am always looking for new high protein breakfast ideas! I decided to take one of my all time favorite breakfasts from McDonalds and make it into a healthier m and protein packed version instead! Between the protein pancake mix, the egg, the egg whites, and the bacon, these homemade McGriddles are loaded with a little over 20 grams of protein each. There are a lot of different protein pancake mixes out there so use whatever you like best, but I like to use the Kodiak brand!

Ingredients

  • 1/3 cup protein pancake mix
  • 1/3 cup milk
  • 2 Tbsp maple syrup
  • 1 egg
  • 3 Tbsp egg whites
  • 1 slice of bacon 
  • 1 slice of cheese
  • Salt & pepper to taste 
Instructions

Mix together pancake mix, milk, and maple syrup.
Grease circle molds really well and put the stove on medium low heat. If you don’t have them, you can also use mason jar lids or a circle cookie cutter.
Grease the skillet and add the pancake mix to the circle molds.
While those are cooking, you can fry the bacon too.
Once the pancakes are starting to firm up, remove the ring and flip.
When both sides are golden brown, remove from heat.
Grease one of the circle molds again and turn heat to low.
Add the egg and egg whites and season with salt and pepper.
Cook until sides are firm.
Remove the ring, flip, and add cheese.
Cook until set through.
Before assembling, you can add more maple syrup to the inside of the pancakes if you’d like!
