This Greek-Style Avocado Toast is very easy and quick to make; with just a few ingredients, it’s ready in just minutes. I added Mediterranean flavors that bring the regular avocado toast over the top. It is versatile and can be made for different meals of the day – for breakfast, brunch, lunch, a quick snack, or even a light dinner.

The avocado toast is like an open-faced sandwich, perfect for a quick, filling, satisfying meal. And it is healthy and delicious! The tomatoes, feta, and oregano in this recipe add so much flavor and aroma to this dish.

How to make the Greek-Style Avocado Toast


I mashed the avocado in a bowl for an extra flare, leaving some chunks. You can blend the avocado in a food processor or a hand-held blender if you prefer to have a smoother texture.

I used a toaster to toast the bread. Alternatively, a broiler, a toaster oven, or even a stovetop skillet can work well, depending on how thick you cut the slices.

Ingredients

  • 2 slices whole-grain bread toasted
  • 1 1/2 avocado
  • 1/2 small tomato diced
  • 1-2 tbsp feta cheese crumbled
  • 1 tbsp lemon juice
  • sea salt and freshly ground pepper to taste
  • Fresh oregano leaves or dried oregano, for serving
Instructions

In a small bowl, mash the avocado with the lemon juice.
Season with salt and pepper to taste. Keep in mind that feta cheese can be quite salty, so adjust the salt accordingly.
Spread the avocado mixture on the bread.
Add the tomato, and feta crumbles to the avocado.
Sprinkle with oregano leaves.
If using eggs, place one halved hardboiled egg (or one fried egg) on each avocado toast. Enjoy!
