Applesauce Muffins
With apple season fully upon us there is no better time to start making some delicious apple inspired treats.
These applesauce muffins are so easy to make, and come out perfect every time. Because of the applesauce in the batter the muffins remain moist, yet still fluffy and cakey.
I have made these with both homemade and store bought applesauce and they are always a huge hit. My kids especially enjoy them for a treat in their lunches or as an after school snack. They also pair beautifully with a hot cup of coffee for a sweet little afternoon pick me up.

To prepare the batter simply add all of the wet ingredients to a bowl and mix until smooth. Gradually add in the dry ingredients and continue to mix until everything is evenly incorporated.
Fill the muffin cups 3/4 of the way full. This recipe yields about 16 muffins.
As an optional garnish, I like to place a thinly sliced apple on each muffin. This really helps to elevate the look of the muffins, as well as helps identify the flavor of muffin if you are making multiple batches.
Bake at 350 degrees for about 15-20 minutes, or until a inserted toothpick comes out clean.
These muffins look so pretty when they are done and taste even better.
The cinnamon and nutmeg in the muffins are the perfect fall scents that will make your entire home smell amazing.
i highly recommend making a second batch of these, because if you have kids around like I do they won’t last long!

Applesauce Muffins

Ingredients
- 1/2 cup room temperature butter
- 1 egg
- 1 tsp vanilla
- 1 cup sugar
- 1 1/2 cups flour
- 1 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 1/2 cups unsweetened applesauce
- 1 apple (optional for garnish)
Instructions
- Preheat oven to 350 degrees.
- Combine all of the wet ingredients in the bowl of a stand mixer and mix on low until evenly combined.
- Gradually add in the dry ingredients and continue to mix until the batter is smooth and everything is combined.
- Fill 12-16 muffin cups 3/4 of the way full with the batter.
- Thinly slice one apple and place one slice on each muffin (optional)
- Bake for 15-20 minutes or until a toothpick inserted into the muffin comes out clean.
- Let cool before serving.
