The Best Caramel Corn Ever!

This Caramel Corn does not disappoint! It is sweet, a little salty, and gooey-just the way caramel corn should be. It's very quick and easy to make-it uses microwave popcorn, real butter-definitely NO margarine, sweetened condensed milk, and brown sugar, just to name a few of the ingredients. All you need to do is pop the popcorn and remove the un-popped kernels-there is a great tip below. Make the caramel and coat the popcorn. Make sure you use a large mixing or serving bowl, this recipe makes a lot of caramel corn. Which is really great because you will love it! I do not think I have ever had any leftover. Ingredients

  • 1/2 cup butter NOT margarine!
  • 1 cup corn syrup
  • 2 cups brown sugar
  • 1 can sweetened condensed milk
  • 1/4 tsp vanilla
  • 4 bags buttered microwave popcorn regular sized
Instructions

Pop all four bags of popcorn-do not burn!
Cut a small hole in the bottom of the popcorn bags and shake out the un-popped kernels. Throw them away.
Open the popcorn bags and empty the popcorn into an extra large mixing bowl.
Make the caramel:
Melt butter in a sauce pan, slowly.
Add corn syrup and brown sugar. Stir constantly.
Bring ingredients to a boil. Boil for four minutes (until sugar is dissolved)
Lower temperature and add sweetened condensed milk and vanilla.
Heat through.
Remove from heat and pour over popped corn slowly while mixing.
Coat evenly and enjoy!!
Tips
  • Don't forget to cut a hole in the bottom of each microwave popcorn bag and shake out the un-popped kernels. It is terrible to bite a kernel when you are expecting to bite something that should be soft and gooey.
