Fact. Mornings are better with chocolate. Even better when it’s sugar free chocolate. It’s taken about 4 attempts to nail this formula. But I think you’ll agree - I’m onto the makings of a plant-based winning way to start your day. It’s crunchy, nutty, chocolatey and costs 40p a serve!


Perfect with yoghurt, fresh berries and banana, or simply served with milk, my Chocolate Granola recipe rivals sugary store bought cereals. With no refined sugar the rolled oats keep your tummy full with happy slow release energy, and the nuts give a good protein hit. And the cocoa powder gives you all that delicious chocolate goodness, without the calories. Enjoy!

Ingredients

  • 3 cups rolled oats
  • 1 cup ground almonds
  • 1/2 cup cocoa powder
  • 1 cup sultanas (or 1/2 cup sultanas & 1/2 cup chopped dates)
  • 1 cup mixed nuts & seeds (I love a mix of pecans, flaked almonds, hazelnuts; with sunflower, pumpkin, sesame & flax seeds)
  • 1/2 cup desiccated coconut
  • 1/2 cup coconut oil
  • 1/8 cup maple syrup or agave syrup
Instructions

Pre-heat the oven at 165° (I set mine on the top n’ bottom oven + fan force setting) and line a large tray with baking parchment paper.
Mix all the dry ingredients together in a large bowl.
Melt the coconut oil (either in the microwave or on the stove top) and gently pour the melted coconut oil over the dry ingredients, along with the syrup. Give it all another good mix before popping in the oven to bake.
Bake for 15-20 minutes - gently, and lovingly turning over every couple of minutes to toast evenly.
Tips
  • Add a little sprinkle of freshly grated orange zest for a ‘Terry’s Chocolate Orange’ experience.
