As the weekend is around the corner, this quick go to Veg pulao is a wonder meal - a healthy, complete meal-in-in-one. Veg pulao or Veg pilaf as it is sometimes called is a one-pot dish you can make with veggies and basmati rice, spiced with whole spices and turmeric.


Vegetable Pulao (Veg Pulav) is a spicy rice dish prepared by cooking rice with various vegetables and spices


Vegetable pualo are the rich source of fiber and can keeps stomach full for longer hours. Pulao also contains many essential nutrients. It include the variety of vegetables such as beans, paneer, peas and carrots.

Ingredients
Ingredients required
  • 1 ¼ cup Basmati rice
  • 2 tablespoons Ghee
  • 1 Red onion thinly sliced
  • 2 green chilies
  • 1 tomato chopped
  • 7-8 Cashews
  • 1 teaspoon Garam Masala
  • ½ teaspoon Turmeric powder
  • 1 tablespoon Ginger garlic paste
  • 2 potatoes diced
  • 2 carrots diced
  • 1/3 cup green peas
  • 1 teaspoon Lemon juice
  • 1 teaspoon Salt
  • Coriander leaves for Garnishing
Instructions
For Cooking
Start by soaking the rice in 3 cups of cold water for 20-30 minutes. 
Drain the water and rinse the rice after soaking.
In the pressure cooker heat ghee, add the sliced onions, whole spices and green chilies. 
Saute until onions start to brown ( 3-4 minutes).
Add the chopped tomatoes, cashew nuts, turmeric and garam masala, ginger garlic paste.
Add the veggies and saute for a minute more.
Add the rinsed pre-soaked rice. Add the green peas, salt, lemon juice, 1.5 cups water.
Pressure cook for 2 whistles and leave it for sometime, it will cook the remaining.
Vegetable Pulao is now ready to be served! 
Garnish with coriander
Tips
  • To not over cook, release the whistle of the cooker and move it from the stove.
  • You can add your choice veggies no problem.
